Server Core has many advantages over the full installation of Server 2008, and can be very useful in many situations and server environments.
Although Server Core has only limited functionality, it is low-maintenance, uses less resources and is much more secure. The downside is that it does not have full functionality and therefore many enterprises utilize both the Server Core and the full install of Server 2008.
This means that as a Systems Administrator you need to be familiar with both editions.
